For those unfamiliar (as I was):

If you are going to eat chips Vacuum Fried seem to be the way to go. Less fat and that fat is there should be better due to lower temperature cooking (also less oxidized?).

Has anyone had these? If so, what brand? How "Paleo/Primal" are they?

I've been looking around but most of these seem to be from China and I have not heard good things about their farming techniques.

I've not heard of them, but I see no reason to shy away from fats. As long as your oil is under its smoke temperature, I wouldn't worry much about oxidization either. FWIW, I doubt Grog had a vacuum chamber to process his 'low quality potatoes' (per wikipedia link). I'd stick to conventional frying and high quality potatoes. – Caveman Kyle Jun 7 at 18:34

Anything with a nutrition label generally isn't paleo.... Put some thinly sliced veggies in your oven, seasoned with Himalayan salt, or pop them in a dehydrator.. thats the paleo way to go...

I am in the camp that as long as all of the ingredients are paleo and the cooking process isn't really bad (regular frying) its good to go. Food processing is food processing whether it is you doing the cooking or the company. I could for example expeller press my own Coconut Oil and Olive Oil (both have nutrition labels) but if I can get a similar quality with a lot less effort why wouldn't I? – Denis May 24 at 17:34

Anything purchased at a grocery store, trucked in from out of state (or out of country) isn't paleo either. And if you made those great Nomnom Paleo kale chips, and marketed them, you'd likely have to put a nutrition label on them. – Christopher Gagnon Aug 3 at 0:05
