What is the barometer out there for baked items, specifically those using Dates as the sweetener. In moderation of course. I just whipped up this Apple Crisp with Salted Caramel Topping. I don't have much of a sweet tooth, but felt like experimenting. Crisp fall weather here in Chicago.

1 Gala apple - sliced in thin strips/wafers

Crumble topping 1 tsp melted coconut oil 1/3 cup Almond Meal/Flour (is there such a thing as pecan flour? I'd try that in a heartbeat) 1/2 tsp apply pie spice (use cinnamon to sub) 3 chopped dates

Chop above ingredients in food processor or mini chopper

Melt coconut oil in ramekin in microwave and then mix in a bowl with other ingredients, except apples

Place apples in ramekin you just melted the coconut oil in Add crumble topping Bake 350 degrees for 30 minutes or until apples are fragrant

Salted Carmel topping

1/2 cup of coconut cream 1 hot date (microwave 30 seconds) dash of vanilla 1/8 tsp or less - melted bacon fat Mix in food processor or whip by hand (the texture of cream thinned out in processor - I put in freezer)

Is this actually a question? Reading it, I think my insulin levels just went up ;) It might be good to melt your oil & heat your date (that sounds rude) in the oven rather than the microwave, since the results aren't yet in about the impact microwaves might have... Meanwhile, my Mum has been making paleo cakes left, right and centre, using dried fruit, nut meal, and eggs. They're an absolute hit, but even though she limits her consumption, she's been gaining belly fat (which she never had before, just rounded thighs pre-primal). – Girl Gone Primal Oct 15 2010 at 10:51
Yes it a question hoping to query the usage of fruits in baked goods. Rather than merely posting a borning question, I added a recipe as an example. The receipe is quite sweet, too sweet for me and I'll tweak it for sure. But not everyone has perfect control of their sweet tooth we're "paleohacks" right? LOL. Sorry to hear things aren't working out for your Mum's belly fat. Sugar is one idea but there are other players. Maybe it's stress? Sleep and Adrenal fatigue are my next subject pursuits. OMG, you're killing me here! Most peeps here tend to limit fruit somewhat, especially dried fruit. Honey, where's my Metformin? Srsly, apple by itself is a pretty big treat for me. (heat your date - hahaha!) – Dave S. Nov 12 2010 at 17:38

I liked the sound of it till you added the dates. I'm now sensitive enough to all sugars that I really can't add dates to dishes.

Raisins are right on the edge of too sweet for me.


APPLE BAKE SUGGESTION

I do make baked apples with coconut oil and mascarpone cheese with cinnamon/nutmeg and a scant amount of raisins. I ram an apple slicer over the top, snap out the core only, push the apple back out the way it came to maintain integrity of the bottom, place it in a baking ramekin to hold it 'shut' in it's original shape, and bake it at 350F for 30 min. YUM.

I have seen both coconut flour & almond flour. I have heard of pecan meal/flour but I have yet to ever see it. My understanding to make any nut flours is to make sure you toast/dry the nuts well, then grind/them finely but be careful not to let them go too long so as not to let them turn into nut butter.

This is a link I had read previously when I wanted to do this, I never ended up doing it but plan to.

Dates are like liquid sugar! I can feel the sugar rush when I eat them. Metabolically, they are surely like eating sugar. But unless you are really working on losing weight or controlling blood sugars, they are probably not a big deal to eat once in a while. Technically, dates are paleo. THey go back at least 8,000 years but probably further and were much treasured by cultures earlier than us. But I would not eat them often.

Yes, they are very sugary. But still better than sugar. My old recipe called for "1/3 stick of butter, 1/3 c. oats and 1/3 cup dark brown sugar". This is a huge improvement. And admittedly, it was WAY too sweet. My mouth burned afterwards. I will never be a perfect paleo eater. Thanks for posting. I've used pecan meal as a filler in meatballs, instead of breadcrumbs - it works great. I have only seen it on store shelves in the deep south though, Georgia and Florida. As mentioned above, I think it's pretty easy to make meal/flour out of any nuts on your own.

That recipe sounds great by the way, I'll have to try it!
