Unfortunately, living in a very rural area, I have been unable to find any coconut milk in my local grocery stores. Since I will have to order some online and it will probably be best to order a case of it at a time, does anyone have any coconut milk recommendations?

Make your own! Easy peasy. 1 cup dried shredded organic coconut to 4 cups water. Blend for 4/5 minutes and strain. Delicious.

Beware of "fillers" in Coconut Milk. Things like Carrageenan and Xanthan Gum. They add "bulk" to the product, which basically means they can sell you a large carton and not have to put as much coconut in it.

I use them every so often, but maybe only 1/4 of a cup at a time or so because of these additives.

I get native Forest, classic, organic at the store. Read the reviews on that Amazon seller... People were complaining that some of that coconut milk was of poor quality.

I've been buying from that buyer for over a year, and have never had any problems with quality. They did recently remove it from their Subscribe & Save program, though, which does not please me. Still, I will continue to buy this as it is part of my routine now and works great for me. – PaleoDel May 28 2012 at 1:36
I also think Native Forest is excellent and am sad that it was removed from the Subscribe & Save program. For some reason the Lite version is still in there, but I want full fat! – Toni May 28 2012 at 14:32

Check if it as Carrageenan in it as a thickener. It causes cancer especially colon cancer.
