I've got an endurance race in August and the Electric Forest music festival at the end of this month, both which are 5 day events. Weight isn't much of a problem for the festival, but during the race things need to be as light and compact as possible.
I need to pack snacks/meals that aren't going to throw me out of ketosis, since that is going to be my primary source of fuel for both of these events. Right now the only things that come to mind are jerky and packets of coconut oil. That'll get old pretty fast.. what else should I pack?
Pemmican is the obvious answer. If made with good pastured beef, it should give you all the nutrients you need. It has little to no water, so it shouldn't spoil and is light weight. One pound is ~2,945 calories. It is 50% fat by weight, so 69% of the calories are fat and 31% are protein.
Though, I tried it myself for a backpacking trip and found I couldn't stomach the stuff. I would recommend making a small batch now and trying it to make sure it works for you before making 5 day's worth. Also, of course, make sure you have plenty of water to drink.

Nori snack size (lots of minerals), a small amount of nuts/nut butter packets if you eat nuts (won't spoil in 5 days), freeze dried veg chips, coconut flakes or dried coconut pieces (Asian groceries). Tuna/salmon pouches.
Added: Artisana coconut butter is available in 1 oz pouches.
