I've just begun to give up dairy, but I like the texture/dessertiness of heavy cream. Can I go to town on coconut milk (the stuff in cans with the yummy fat in it, not the watery stuff in boxes)?
Some people (really glad I'm not one) have digestive issues with too much coconut milk or oil. From what I hear, it's pretty uncomfortable. Build up gradually to check out how it works for you.
My general rule for personal consumption (of all things, not just coconut): If you think it might be too much, it probably is. Don't go overboard on coconut milk, but certainly don't need to avoid it unless you react poorly to coconut. (Or, enjoy but don't gorge yourself.)
my best advice is to STOP eating it from a can, please do a little research on BPA and what it does to your body. If you want to make coconut milk all you need is hot water + coconut + blender. Take a minute and google both of those things, I store mine in mason jars. I know this is off topic, but eating canned anything is seriously dangerous
I was gung-ho to start drinking a can of coconut milk a day. I drank it straight. It caused me to, ahem, spend a lot of time in the restroom. I switched to putting it into my coffee, and have built up to where now can handle about half a can a day in the form of coconut milk "lattes." I also use it in chicken curry soup.

I'm not sure where you got the idea that the stuff in cans has more fat in it -- perhaps because many of the canned coconut milks are been thickened with guar gum? Fat does not equal thick.
There is no functional difference between canned or boxed coconut milk; any difference you perceive is down to the ingredients. Lots of manufacturers cheat with fillers and thickeners. If the coconut milk is any good, that is totally unnecessary.
I second the others who advise steering clear of cans, and can also recommend the Aroy-D product in aseptic packaging. It is also highly prized by Thai people. It's more expensive (although in my experience, not much more) for a reason. (Note that I cannot be sure that it is free of BPA -- but given that there is no epoxy liner in aseptic brick packages, I think the probability is low. It may contain other potentially hormone disrupting plasticizers, but this is the risk you take with any processed and packaged foods.)
I drink about a cup of coconut milk a day, sometimes more. Unlike some others, I have never had issues with loose stools from it. It's delicious, very filling, and can be used for sweet or savoury cooking.
It does seem to make my cholesterol go up, but I think the response varies from person to person (I have some genetic predisposition to a higher LDL). It seems to raise my HDL also, so on balance I think it's okay.
I am new to the whole coconut thing.... started eating one tablespoon of coconut oil a day and just went out and bought some coconut milk to add to my green smoothies. I have been reading some information that says too much of the coconut milk is not good for you; however, cannot seem to locate the answer how much is too much. Can i safely (for cholesterol's sake) drink 1/4 cup a day?
I drink a can or a glass of coconut milk almost every day, I also gave up dairy and I haven't had any problems with coconut milk and didn't gain any weight. Besides, it has many beneficial properties, here's the link to the article about the benefits of coconut milk.
