out of curiosity i looked at the carb profile of kale and the sugars + fiber don't add up to the total carbs. what are other carbohydrates that would contribute to the total carb value and do these carbs cause any insulin response?

That would be starch (chains of glucose). Total carbs should be fiber + starch + simple sugars.

I really wouldn't worry about the effect on insulin levels from kale unless you have a serious, specific health concern.
