I'm looking for the absolute easiest/quickest way to prepare my potatoes. Here are my current go to moves:

Sweet Potato

  • Wash in cold water
  • Leave wet and wrap in paper towel
  • Microwave for 7 minutes
  • Cut off ends, slice in half lengthwise
  • Scoop out inside and throw away peals

Problem: I always burn my fingers trying to get the peel off

White Potato

  • Peel
  • Boil
  • Drain
  • Store in fridge
  • Reheat in microwave or frying pan

Problem: Requires advanced planning

Anyone got any tips? I'm not too worried about getting the perfect texture. I just don't want to eat the peels.

Here's what I do with sweet potatoes (don't eat white potatoes):

Cut it in half and put it in the toaster for 40 minutes (you can also use a regular oven). When the timer dings I just leave it in the oven with the door open to cool for 5-10 minutes (I get lots of other stuff done during this process). When I'm ready to eat the peel just comes right off. I've even left it in the toaster (toaster off, door open), gone to crossfit and had it with my PWO meal. If I'm going to let it sit that long I peel it, put it on tin foil and put it back in the toaster for 5-10 minutes to heat it up. Peeling before reheating means no burnt fingers.

When I'm feeling a little more ambitious I cut peel it and slice it very thinly then put it in pan with coconut oil. Sprinkle salt, pepper, paprika, and red pepper flakes on it and let it become crispy. Flip and do the same to the other side. Not simple like you were asking, but definitely tasty.

Use a hot pad? I don't bother scooping the meat out...just eat it in the skin then toss skin into the compost bucket.

Stick a probe thermometer into a potato and set the alarm for 210º. Bake in the oven at 350º.

Set it an forget it until the alarm goes off. This works for both sweet and white potatoes. As someone else mentioned, bake a batch all at once (I wouldn't want to turn the oven on for one potato.)

I put sweet potato in oven on 350 or so, there is a wide range of times in which it would be done so you can't mess it up too bad. It takes around an hour to cook but the actual work time is like one minute. Put on pan, put in oven, when you can jab a fork in them and it all soft, they are done. Cut off ends, slice open skin, grab two ends of skin and flip onto plate. Done.

Why not just cook a bunch once or twice a week? Then you can remove the peels, store them in a tupperware dish in the fridge, and then heat them as needed? I don't think there is an easier way, than what you've written above, that will give you cool potatoes that are actually cooked.

I keep mine in the skin and eat it. I love cooked potato skins, especially if I slather the potatoes in coconut oil before I cook them.

Is there something wrong with microwaving them? I poke holes with an ice pick, and one sweet potatoe takes 3 mins. – Theresa Jun 5 at 18:04
