What's your favorite slow cooker recipes?

Not exactly a recipe, but I find my slow cooker absolutely perfect for making bone broth - brown the bones in the oven with carrots, onions, and celery cut up into 2" or smaller chunks, dump all of it into the slow cooker and cover the bones with water. Add a tablespoon or so of cider vinegar and let it go on Low for 24 hours or so. It doesn't get any easier.

This is the easiest recipe ever...and it's delicious. I make it exactly as is, but sometimes I modify it. You can switch out the Italian spices and use homemade taco seasoning instead. When I do that, I top the soup with avocado and a squeeze of lime. You can also leave out the broth and use the meat in tacos.

I seriously make this about 1x a week.

2-day Oxtail Stew (so named because it takes 2-days to prepare)
2 pounds Oxtails
1 pound Beef Ribs
1 pack of marrow bones (about 6)
2 cups of Cabernet Sauvignon
1 cup of chicken stock
Celery, Onions, Carrots, Leeks, 3-4 cloves of garlic
Dry rosemary and thyme
salt and pepper
whatever seasonings you want (I am partial to a little bit of nutmeg)

Cook for a day (8-10 hours on low). Strain out the broth, debone the meats (making sure to use a chopstick to get every last bit of marrow out of the marrow bones), and refrigerate them both separately.

After broth has chilled, remove the disk of fat that has risen to the top and save it to fry eggs in (yum). Put the gelatinized broth in a pot on the stove. Add your meat back to the broth, with another round of celery, onions, carrots, and leeks. Simmer until veggies are tender.

Similar to Ruth's salsa chicken recipe, I do a pork shoulder with green salsa.

  1. 3 lb pork shoulder roast 1.
  2. 16 oz jar salsa verde

Brown meat on all sides, dump it in the crock pot, add the salsa, cook on low for 6-8 hours.

(It's better if you brown the meat first, but still totally acceptable if you don't.)

Shred & serve. Sour cream is great with it if you use dairy.

MAGIC STEW:

2.5 lbs stew meat (loin cut, lean: 1.5-2in cubes).

3 pounds spinach.

4 serrano chiles

1 whole white onion

6 cloves garlic

3 tbps coconut oil

3 tbps kosher salt

OPTIONAL: (above is for VLC)

2 cups red potatoes or sweet potato cubes

1) Place spinach at the bottom (remove stalks, cut up leaves a bit) 2) Meat on top of the spinach 3) Chiles, onions, garlic, and salt-diced, mixed and spread on top of meat. 4) optional, potatoes on top 5) simmer for 8-10 hours. 6) chow down.

Salty, Fatty, Spicy, Low Carb Deliciousness

(800 kcal, 75g protein, 30g fat, 25g carb) / serving.

Very simple and my son's favorite:

Take one pork shoulder roast. Rub with Penzey's "Barbecue of the Americas" spice rub (or any dry BBQ spice mix). Put it in the cooker on top of one chopped onion, cook on low for 8-12 hours until very tender (when it shreds easily).

Remove pork, shred with fork. I then mix back in some of the juices & onion from the bottom of the pot, enough to make it nice & moist, and add more of the spice mix to taste. My son then mixes ketchup into his portion to make it more like a standard pork BBQ. I like it just fine as is.

We also make broth in the slow cooker (with chicken feet) about once a week, and in the winter, we do lots of pot roast recipes.

paleomama has a great coconut curry recipe. i really hated coconut curry until my wife made this. i was very surprised at how good it was.
