What's something delicious I can make?
Looking for something to replace my night time casein and heavy cream shake... that has been ditched so I can more align myself with paleo nutrition.

I think coconut flakes are delicious sprinkled over fresh cut fruit (especially mango and pineapple). If you bake berries in the oven with some coconut flakes on the top, it creates a "berry crisp" type dessert that is really tasty (It's especially good if you douse the coconut flakes in butter or coconut oil and cinnamon first, then sprinkle them on toward the end of cooking, so they don't burn or overcook). |

I blitz them to a powder in a food processor, mix them with spices and ground chicken, and bake them into nuggets for my kid. Other than that, I don't really do much with coconut flakes. Tried adding them to my casein shakes and they just clumped at the bottom. |

I honestly eat them plain when I want a small, crunchy snack. Otherwise, I used them to make grain-free granola bars. |

Coconut flakes have taken over one the utilitarian duties that used to be performed by bread in my life. I use them to soak up the grease and liquid left in my skillet, or anytime I have liquid to soak up. I dump them onto the dish like a topping. |

Eat a few chucnks of 100% chocolate with a handful of coconut flakes. So delicious! Only do this if you are thin, and realize that if you do make this a habit you won't be thin for long! |

I turn them into coconut milk first, then re-dry the flakes for use in cooking (texture/flavor). |

I have a dessert that has one main ingredient coconut flakes. I think this is what you are looking for. Ingredients: Coconut, desicated unsweetened, .2 cup Almond Raw Sliced, 0.20 cup Honey, 2 tbsp Cocoa, dry powder, unsweetened, .5 tbsp Almond Butter, 2 tbsp Melted butter 1 tbsp (optional) Coconut milk 1 tbsp (optional) Chopped hazelnuts 2 tsp (optional) Add the ingredients in the following order for best results. 1. coconut (unsweetened, desiccated). 2. almonds (sliced). 3. cocoa powder. stir. 4. almond butter. 5. honey. stir well. You can play around with the amounts of each ingredient to get the right flavors. If it doesn't taste good at first add more almond butter. If it isn't sweet add more honey. Now, I realize that this is a sweet and I don't eat it every day. But when I come home and feel like eating absolute crap, I make this instead because at least it is made of paleo ingredients! Put it in a coffee mug and eat with a spoon. EDIT: I forgot to mention that it is around 530 calories for just the 5 main ingredients and not including any optional ingredients. This is a fairly large serving, I usually eat about half of this. |

They work great in the almond-coconut-chocolate bark recipe in the Quick and Easy recipe book from Mark Sisson, for one. Even simpler, I've coated clumps of them in melted 85% cacao chocolate (melt chocolate in the microwave, add coconut - generally add more coconut - stir, and drop by spoonfuls on parchment or wax paper to cool). And I mix them with walnuts and broken up 85% cacao chocolate bars to take to movies as a popcorn alternative. Or eat them alone as a snack. |

i like to make "macaroons" by grinding up in a food processor a combination of dates, almonds, coconut flakes, a little coconut oil, and some spices/flavoring (vanilla, cocoa powder, cinnamon, etc.) until it forms a paste. Then roll them into balls and coat w/ coconut flakes; store in the refrigerator. so delicious! |
