My husband has a coconut allergy, so I cannot use it the way it seems everyone else does. I like EVOO- cant I use that? Thanks!

Use how? To cook with? Try ghee unless either you or he has an extreme allergy to lactose, and yeah, I know they say it's free of all lactose/casein and whatnot but you should never mess with dire allergy situations. Tallow is another option. Duck fat if you're not worried about the O6-O3 ratio too much (higher 6s in poultry than in ruminant animals in most cases). Olive oil as a dressing is fine. Let's see...other oils...salmon oil or cod liver oil or krill oil or whatever you can find can meet fat needs if that's what you're worried about. If you're strictly trying to take out his allergen to modify a recipe though, I hate to tell you but in most cases you're not going to find a viable substitute for coconut. There's a pretty distinct flavor there... Tell him not to worry though. He's far from the only one with coconut issues. |

I personally wouldn't use EVOO to cook with, although it's much more stable than people think. CO isn't a necessity for life, so just use lard, butter or ghee instead. |
