Does ghee from "organic sweet cream butter from pastured cows on a small, certified organic family farm" offer the same awesome health benefits as Kerrygold pastured butter?

I guess my question is: is the kerrygold goodness contained in the fat or in the stuff that gets skimmed off in the process of making ghee?
PS: the reason I'm trying ghee instead of the Kerrygold is I'm starting a 30 day low-histamine diet, and since there's no protein in ghee, I'm guessing it might be lower in histamines (just a theoretical guess, I actually have no idea).
My guess is if you are making ghee from the organic sweet cream butter, you'll be removing all the milk solids from the butter anyways and be left with the fat/ghee.
So, if I understood your question right, by making it into ghee it should be pretty much the same/both come from pasturized cows to make their butter (but there are sometimes differences between one brand to another I've found, color of the ghee can be different, smell....I think it then becomes personal choice if all other things are similar).
