Does ghee from "organic sweet cream butter from pastured cows on a small, certified organic family farm" offer the same awesome health benefits as Kerrygold pastured butter?

I guess my question is: is the kerrygold goodness contained in the fat or in the stuff that gets skimmed off in the process of making ghee?

PS: the reason I'm trying ghee instead of the Kerrygold is I'm starting a 30 day low-histamine diet, and since there's no protein in ghee, I'm guessing it might be lower in histamines (just a theoretical guess, I actually have no idea).
