I made the mistake of buying frozen berries, and since I don't bake or drink smoothies, I'm at a loss of what to do with them. Halp!
Edit: so I ended up making some muffins. Those berries were taunting me.
2 bananas, 2 eggs, 4 tablespoons butter, 1/4c tapioca starch, about 1 cup chopped strawberries/blackberries, 1tb sugar, 375F, 20min.
Well, something like that anyway, I didn't write it down.
Was good, good, good. The bananas and the strawberries were actually pretty sweet.
There´s tons of things you can do!
If you do Dairy, throw them in Greek Yoghurt with some Cottage Cheese, blend and freeze = Best Ice Cream ever.
If you don´t do dairy, do the same with Coconut milk and some shredded Coconut. Cacao Nibs on Top, please.
Eat them Plain or with Coconut Cream.
Eat them with dark Chocolate chunks or Cacao Nibs.
Eat them with Cheese.
Sauté Onion in Butter, add Berries with little Water, boil them up, let them simmer till you got Berry Sauce, serve with Pork Chops/Chicken/other meat.
The obvious. Eat them straight from the freezer. I do this with blueberries all the time.
After having allowed 12 lb of honey in 4 gal of water to ferment for 3-4 weeks, pitch about 8lbs of berries into it to make a berry melomel. After another few weeks or so when fermentation is done, rack into bottles for however long you want to age the mead. When its ready to drink, enjoy.
Frozen berries, slightly thawed make a great snack! At the resort we were at recently they had a cooler of frozen grape "shish kabobs" they passed out. I plan on keeping some in the house now!
Throw them still frozen in an omlette with a frozen creamy cheese. If it's done properly where the eggs are almost done when you put them on- then fold the eggs over- you get a sweet pocket. Absofreakinlutely awesome breakfast! You get that pastry breakfast without the pastry.
