So i'd usually have pancakes made with protein powder an egg and some oats then have nut butter with it. Wondering what a good paleo substitute would be?
The "standard" substitutes for oat/oat flour are things like almond meal or coconut flour. I'm a fan of these pancakes. I sub canned pumpkin for the butternut squash. I'm sure with a little experimentation you could get the whey protein in there as well.
I use to do the protein powder pancakes too, now I just do the gaps pancake (which also work perfect in the waffle maker)
for each serving (I make 4 batches at a time) 1 egg 1 oz soaked/dried nuts (you can mix or add what you like, walnuts, almonds are what I use/mixed) 1/2 banana
puree in blender, cook on griddle (make small or are impossible to flip), drop 1 tablespoon for each pancake.
I like to toss in some blueberries after I've pureeed the mix.....top with ghee and honey, nutbutter or coconut cream with butter.....all yummy!
Four eggs, plus 1/4 cup coconut flour, plus a tablespoon of coconut milk, water or cream. Blend really well, let stand for about 5 minutes (the coconut flour soaks up some of the moisture during this time and makes the batter stiffer) and cook on an oiled griddle or skillet (small pancakes are better!).
Top with warm blueberry puree and/or butter.
Yummy and simple!
