Requirement: No more than 4 ingredients allowed. Must be possible to prepare in less than 20 minutes.
I get tired of recipes where people add ingredients like crazy. I just wanted something simple, that won't fall apart and tastes good.
I tried something tonight with my ground beef. I was super delighted with how they turned out!
- 1 lb ground beef
- 1 egg
- 1/4 cup almond flour
- 3 cloves crushed garlic
And if you're feeling spicy, add:
- 1 tsp oregano
- 1 tsp paprika
- dash pepper
- dash salt
Whisk the egg in a small bowl. Dump it and everything else in a bowl and mash together with clean hands. Shape into 2" balls. Pan fry for 15 minutes in coconut oil on medium heat, until meatballs are cooked inside.
They stuck together really well and were delish!
Next time I'll try baking them for 20 minutes at 350'F as per Alyssa's recipe.

I make these meatballs for breakfast - my sons LOVE them, and I do, too! Tasty!
2 pounds ground pork
1 pound (fatty) ground beef
3 tablespoons chopped onion 4 eggs
Put everything in a deep bowl. Mix and mash by hand - I love this part! Roll into 1-1/2 inch balls or spoon onto cookie sheet. Bake at 350 for 18-20 min.
Makes 50 - 60 meatballs which is a TON but they freeze well. I have teenaged boys, so that isn't as many as you'd think.
These recipes all sound great. My tip would be throwing something acidic (and ideally tasty), such as lemon juice, over the mince (the longer before cooking the better). This makes it a lot softer and easier to mix/blend by tenderising the meat and emulsifying the fat. I used this for making pork burgers to barbecue, but the principle's the same.
Tomato puree is another good and common binding agent and you get some lycopene and other nutrients for your effort. Another, bizarre one, that I tried just before barbecuing on a whim, is mashing together mince with pesto (if you can make or find one without masses of omega 6). which gives you a complex, interesting blend of flavours in five seconds flat.
