Paleo Newb and Turkey Day is coming up. I need to serve the traditional dishes, but paleo and vegan. Can u imagine what a disaster this could b e.? Looking for a mac and cheese recipe with cashew cheese and some kind of brocolli macaroni. Can you see this happening. I can. Need help for a vegan paleo macaroni pasto recipe... Pls help iuc.

@joey: I assume this is careful advance planning on polynesian_metal's part, as it will probably take him from now until T-day to find a M&C recipe that is both paleo and vegan and actually tastes good and has the right texture. Given a challenge of that magnitude, one cannot start too soon. ;) – More Butter Please Jul 1 at 18:58

I tried it, you might as well just brown up some cheese....mine turned out disgusting!!

In that case go with the cheese with the most lactose in it then. The hard goat cheeses. And coconut milk. I can totally see where this is going now. Thanks for helping me figure this out. – polynesian_metal Jul 5 at 2:23

Jackie, I love your recipe. You know what I'm struggling with. Its that go to casserole that everybody loves. I love to cook and am a Paleo Newb so I'm in that process of trying to recontextualise my comfort foods in a way that makes sense to eat. There are so many options out there and I love to cook. This is one of the most appealing aspects of this lifestyle choice and it is the creativity I get to have with food. I'll use your base as a template. If I were in this position, I'd make two separate versions: a vegan M&C with regular pasta and whatever the hell one uses for cheese in that situation; and a paleo (or at least primal, as I'd go ahead and use real cheese) version.

Then again, I'm assuming that you'll be feeding vegans and your paleo self, but no actual paleo vegans. If there are paleo vegans involved--well, you have my condolences. I'd just leave the country for Thanksgiving, in that case.

You can use cauliflower instead of noodles. I think there might be some low carb recipes you could borrow from.

I don't think cashew cheese will give you as authentic a finished product as something like this sauce recipe will (use nut milk instead of soy obviously) The sweet potato adds the color and texture and nutritional yeast give a very nice cheese flavor. Baking it helps with the texture a lot as well (as opposed to just saucing the macaroni substitute as in her quick recipe version)

I would use rice pasta/noodles as well although both zucchini and cauliflower would work but not as well as the rice IMO. Depends on your crowd I think. If you are feeding SAD eaters then rice noodles for sure. If you are feeding vegans or other more health conscious people I'd use veggies in place of pasta/noodles.

What I'd need to do is make it taste awesome to me before I'd serve it to anyone and if I had to choose between the Paleos and the Vegans I'd definitely go with the vegan option. I'd go with the friendliest pasta. Is rice noodle the most Paleo Friendly noodle in your opinion. Again I'm a tootal nube. – polynesian_metal Jul 5 at 2:22
Welcome nube. You're still allowed to have an opinion. If we think it's a stupid one we'll let you know, lol. I think the OP is in a tough spot needing both vegan and paleo. I don't think you can get cheese flavor without nutritional yeast but that's just my opinion. I have yet to find a sauce without it that tastes like cheese. – Shari Bambino Jul 5 at 15:45

Hey, I have a paleo mac and cheese on my website www.irislazz.com Its a cashew based cheese sauce that has bacon grease but you could use veggie bullion instead, but quality bacon grease is the jam!

Maybe try spagetti squash for the noodles...

I use that for my paleo chicken parm.
