Maybe I'm not being very resourceful but every major grocery store I've been to around my town (I live in the northwest suburbs of Chicago) does not carry beef liver. This includes the whole foods, fresh market, 2 major chain supermarkets and the local butcher. What am I missing here?
Hi. The big, new-ish Whole Foods in Chicago (Kingsbury and North) carries grass-fed beef liver, although it's a hot commodity so they run out quickly. It's in the freezer section to the right of the meat counter. I talked to one of the butchers and he said they get it in weekly, although I can't remember which day. I'm sure you can call ahead and have them set some aside for you to pick up next time you are in the city :)
Do you have any farmers markets around? That's where I get mine. There's a grass-fed beef farmer who comes to the market and I like that I can talk to him and learn about his farm directly. Around here, the farmer's markets are usually only there one day a week, but we have several around that are open different days. Search around and maybe you can find something that works with your schedule.
Have you tried a local butcher? I don't live in the same country as you (!) but I order everything like offal, less popular cuts and bones for stock from my butcher (if he doesn't have them on hand). These kind of thingds tend to be really reasonably priced too as they aren't popular!
Most beef liver now is sold frozen -- so you might try looking in the freezer section instead of with the fresh meat. The specialty butchers that I go to can get fresh liver for me, but I usually call ahead to make sure they have some before going all the way over there.
