In an effort to eat more I've been trying to get through 250g of kerrygold butter a day. At the moment I've been creating a vegetable/butter mush. I don't want to eat like an infant forever though.

So, how do you consume your butter and what's the best way to consume large amounts?

Straight, Scrambled eggs, in a stew?

One word: PATE.

Balanced Bites chicken liver pate recipe -- calls for 1/2 cup of butter.

You could probably just eat it with a spoon, but it's even better with grain-free crackers if you can find a good recipe. (Usually made w/almond flour.)

Call me gross and disgusting but I just put in in my mouth right out of the package. I just cut a piece and let it melt in my mouth. O.k. sometimes I don't use a knife. So sue me ;-) .

Just wanted to say how much this makes me smile, because if anyone ever caught me eating butter with a spoon, I know they'd be horrified. I would've been horrified 10 years ago. Now? Pass the butter! (And just to clarify, I don't eat a lot of it by the spoonful. Even I don't think I could do that. But a little pat? Heck yes. (Okay, maybe a big pat, but not like 5 Tbsp or anything.) – Amy B. Scrambled Eggs. You will be surprised by the amount of fat they can soak in while in the pan.

Everything. I mean, come on! Think of the paleo template of foods... Butter goes awesome on just about everything. As a matter of fact, I've been putting it in my breakfast smoothies as of late. It's slowly becoming, "Would you like some more "insert food name here" with your butter? ;)

I've found myself accidentally eating full sticks of butter in the day or two after making this tuna mousse. I know it sounds a little weird, but it is soooo freakin' good.

1 stick of butter

1 can of tuna

handful of dill

juice of 1 lemon

salt and hot sauce to taste

Blend in food processor until fluffy and shiny, and dip veggies, cheese slices or crackers (or just grab a spoon).

I wrap slices of roast beef (the kind cooked in store with no preservatives and no salt) around butter and eat it as a sort of a sandwich. Roast beef by itself is rather dry and tasteless and chewy. When you add butter it is scrumptious.

I made a roast a while back, and this was pretty much how I ate most of the leftovers. And spiral-sliced holiday ham leftovers are just as good (maybe even better!) eaten this way, especially with a little bit of Grey Poupon mustard. – More Butter Please Jul 3 at 21:00

You can put it on pretty much anything. Butter on steak is decadent, but delicious. Butter on vegetables: great. I've heard of people putting butter in coffee.

But why do you want to eat more butter? Are you underweight?

Butter in coffee is kind of amazing. You blend it in with a stick blender or a little handheld frother. Don't use the salted kind! o_O – Karen Jul 3 at 15:47

+1 for butter on steak. Even better if it's herb butter. (Let butter soften a bunch, add whatever herbs you like [basil, oregano, rosemary, thyme, or even stuff like garlic, chili powder, paprika]. Mix it together really well, wrap in plastic wrap, roll up like an old-fashioned piece of candy twisting the ends shut. Stick in freezer. When you make a steak, just before serving, slice off 1/4 inch or so of the herb butter and add to the steak. Mmmmm... – Amy B. Jul 3 at 15:58

I can eat cheese with no problem, and one of my favorite quick high-fat snacks is to spread unsalted butter on a slice/hunk of cheese. Another is to crack a couple of eggs into a bowl, whisk in a bit of heavy whipping cream, and float a hunk of butter on the surface. Nuke for 1:30-1:45, add salt and pepper, eat. The butter blends with the eggs and is divine.

As others have mentioned, scrambled eggs take up huge amounts of butter if you let them, and only get better for it.

I also slice up steak, quickly pan-sear it in a cast iron skillet, then eat it from a bowl with added butter and herbs. Dredge the meat in the butter, then drink the combined meat juice, herbs, and butter left in the bowl. Fast and amazing.

I also use tomato-based Italian sauces over meat, veg, or roasted potato wedges. When heating them I add a massive amount of butter and extra garlic/herbs. It really enriches the flavor.

Speaking of potatoes, and since you want to gain weight, consider adding more carbs alongside the fat. Baked potatoes will hold a huge amount of melted butter, or you could make super-buttery mashed potatoes. I also love occasional steamed yams mashed with lots of butter and a tiny drizzle of maple syrup whenever I get odd pancake cravings (which are really just for the taste of maple syrup, I've decided). I can't do that very often as the carbs completely stall my weight loss, but for weight gain? They might help.

I have some favorites:

1) In rutabaga stew. OM NOM NOM 2) In the coffee (if you're in a rush during the morning this is a fast and easy way of getting 25-50g extra a day).

In general, all stews taste better with some butter in it. Butter in coffee may take some practice tho, but if the butter is good and not to salty, it wouldn't be any major problem.

When I eat some dry chicken (breast) I pile on the butter :)

If you also eat other dairy you could make an Alfredo sauce. Half cup cream, half cup Kerry Gold, half cup raw parmesian cheese plus some freshly grated pepper. You can eat it with anything, but it's especially good with spaghetti squash or over chicken and broccoli.

Of course, my sons like to eat frozen butter straight-up like a popsicle.

Someone mentioned scrambled eggs, but I must push the Gordon Ramsay method of making them - creamy, custard-y, buttery eggs. I do add a blop of homemade creme fraiche at the end of mine, also (made from grassfed cream), but it's not necessary. Just make sure the butter used initially is chunked into smallish pieces so it melts quickly enough. I could eat these for breakfast everyday! I serve with breakfast meat and fruit, though his tomatoes and mushrooms look yummy, too.

Also, Indian Butter Chicken - the recipe I use is mostly butter, grassfed cream, and tomatoes.

Melt it, and mix it 60/40 with your favorite hot sauce with one of those battery operated coffee frothers until it homogenizes. Dip ANYTHING in it, cooked chicken, cheese sticks, celery, carrots, steak bits, sausages, just about anything.

That's Buffalo Wing sauce here in Upstate NY. Pan-fry your wings (in butter of course!) in an iron skillet, flip em & toss the pan in a 450 oven until the meat starts to pull from the bone. Toss in the sauce... – Kashkillz Dec 12 at 2:03

Coffee, coffee substitute teas if you like them or tolerate the ingredients, hot chocolate, Scrambled eggs, Steak (coat in melted butter, salt, pepper, and pan fry), fish (pan fry in butter), roasting meat (great on lamb and rosemary), sautéing veggies (leeks, spinach, etc.), grilled vidalia onions, and the base for so many soups, tart crust with almond meal and/or coconut flour, warm berries and brandy, peaches (marinated in butter and bourbon and grilled or sautéed in a pan), paleo crepes stuffed with butter and whatever suits you.

I consume 6-8 tbsp of ghee a day. You could use butter instead as follows:

In the morning I blend 3 tbsp of ghee in coffee.

At dinner I scramble 4 egg yolks in 2 tbsp of ghee. Egg yolks can take up an amazing amount of fat. Makes the egg yolks taste fantastic.

I get another couple of tbsp on potato or rice and veggies with dinner.

When I was trying to gain some lbs, I'd make two shakes a day (between meals) with:

2 tablespoons melted butter (or more), 8oz coconut milk, Serving of whey protein, Pinch of cinnamon and/or vanilla extract, Couple ice cubes.

Blend until smooth.

It worked great and easy to drink.

I think changing the viscosity will make it the most hyper-palatable:

  1. Blend it into a warm beverage like warm almond milk, warm tea, coffee

  2. Blend it into MCT oil (50/50) to create a mix that stays spreadable when refrigerated

  3. Melt it and blend it into a shake [I like it with egg yolks, almond milk, milk]

  4. Instead of a pure veggie mush, process or blend 1/3 of the vegetables with the butter and use that as a sauce for the other 2/3 of the vegetables

One snack idea is just a mix of room temperature butter with an ounce of nuts. The crunch of the nuts helps offset the butter.

For me a digestive support like Betaine HCL helps a lot when consuming a lot of fat.

How on earth can you all consume so much fat with no gastrointestinal consequences? If I go over 100 grams of fat I have loose, explosive stool for a couple days...

You can always "cook" (NOT BURN!) the butter (i.e. eat it hot/melted in some sort of "vehicle") like the mousses and pates, but warm. I find it much more palatable that way. I eat a stick of butter (almost) every day with my veggies - steamed broccoli? Add a stick of butter and some lemon juice. Bunch of chard or kale from the co-op? In the pan with rendered lard and a stick of butter and some garlic to finish. Sweet potatoes or rice? - stick of butter slows the glucose spike and makes it all worthwhile. I even like to burn the bottom of rice a bit when I add that much fat. I'm not very low carb (at the moment), but I find that I really feel great with more fat!

Make a fat bomb smoothie.

Coconut milk, a whole avocado, maybe some cacao powder, half a very ripe banana (for sweetness; or honey, or good maple syrup), plus a couple of tablespoons of MELTED BUTTER.

BLEND.

OH EM GEEEEEEEEEEE!
