I sautéed and ate liver for the very first time today, and I honestly like it very much. I was tempted to eat what was left over for dinner, but I refrained because in all my reading about paleo diets, no one seems to eat liver more than a few times a week.
I wasn't sure if this was due to liver not being considered by many to be as palatable as other meats, or if the vitamin density made liver one of those good things which becomes bad in overconsumption. Anyone have some answers?
I find that I automaticly gets put off from eating to much liver. It just doesent taste good after more than 300-400 g. When I havent consumed it for 4-5 days it tastes good again :)
I remember Mark Sisson made the point on his blog that in evolutionary times it would be very unusual to eat liver every day. You'd have to be an extraordinarily successful hunter to manage that. You wouldn't just catch some animal and throw everything away except for the liver.
With that in mind, and because liver is so potent, it may be prudent not to eat it every day.
stick the liver type and serving size in to the NutritionData database to get an approximate idea of the amount of various vitamins & minerals you are getting.
Then you can make up your own mind on how much & how often you want to eat liver as part of your diet.

I think that it has more to do with amount than frequency. If you made up a pound of liver and ate it over the span of three days, I would say "it is safe to eat a pound of liver a week" instead of "it is safe to eat liver three times a week." At least, that is my understanding of it. I hear you on liking it. I recently made homemade pate with my liver leftovers and made pate-stuffed hamburgers with the leftovers. It made me eat liver three days in a row, but it was only a pound total for the week.
If you are comfortable with what you body might be telling you, then the temptation to eat more may be an indication that your body needs more of the nutrients that it found in the liver you ate. Like torgeir posted, you may find there is a point when you don't desire it as much; that is a good point to stop at until you feel like eating it again.
