I got the So Delicious brand coconut milk (I know it contains additives but I got this before I learned how to make my own coconut milk). Why does it taste soapy? Is it due to rancid fats?

Try Goya® coconut milk, i've tried a bunch of brands, this one is the best by far

Thanks for the tip. Is it in a can? – Chinaeskimo Jul 6 at 23:25

I don't think So Delicious and Goya are comparable products--they are two totally different kinds of "coconut milk" for different purposes. So Delicious is a refrigerated, watery dairy milk replacement with unpersuasive coconut flavor and overly-thickened (with gums) texture. Goya (yes, it's in a can) is a real coconut milk, the thick, fatty, yummy stuff made from coconuts and water (though seemingly every brand has at least some additive, either a stabilizing gum, or a preservative, or both). So Goya is great, but it's not really a substitute for So Delicious, nor vice-versa. – Christopher Gagnon Jul 6 at 23:31
@Christopher Gagnon: LOL, you make the stuff in the box sound so appealing! I think I'll go straight for the stuff in the can. I have great almond milk for when I want milk (Which is virtually never anyhow). – Chinaeskimo Jul 6 at 23:35
The Goya Coco de Leche (or whatever it's called) also claims to be gum-free. Stuff is delicious! The crap in a carton doesn't even compare. So Delicious = Cardboard. – Nemesis Jul 21 at 0:27
AROY-D brand is free of gums and preservatives. – Karen Jul 21 at 12:13

They all taste varying degrees of soapy to me. So far the least soapy is aroy-d in a box. It tastes the most like fresh coconut.

I doubt it's from rancid fats. I would guess coconut contains some natural saponins or something.

Edit to add: Oh yeah, coconut is high in lauric acid, which is soapy. Sodium lauryl sulfate (SLS), which is a surfactant often found in shampoos and soaps, is derived from the lauric acid in coconut.

thanks for the interesting info about SLS! – coffeesnob Jul 21 at 5:33

I am not sure about soapy, but I tried So Delicious coconut milk and was really disappointed. It tasted very sour to me, even though it was fresh. I have not bought it since.

Golden Star coconut milk has only two ingredients: coconut and water. Does not taste soapy at all. I have tried the Goya, Thai, etc. and have found this brand to be the only coconut milk in a can that actually tastes GOOD. I think the funky taste you are getting is from the gums added to thicken. Golden Star doesn't have this taste. I don't use any of the refrigerated carton variety milk replacements to make a comment.
