I don't miss bread. I don't miss sweets. I don't even miss my expert pasta. But god do I miss pizza, and all these paleo pizzas have eggplant, tomatoes, and peppers. Unfortunately, I'm sensitive to nightshades, so no can do. I'm new to 'hacking' recipes since I usually just eat whole foods, but would really appreciate any input on the subject of paleo pizza. Any good hacks/ideas/recipes/help on how to make pizza without nightshades???

Make a pesto pizza! I have a paleo pesto recipe on my blog- feel free to make it with basil instead of cilantro for pizza--

Beat me to it. I love pesto and it has a great strong flavor just like a nice tomato sauce. And being considered Italian food, it kinda-sorta has the same flavor sensibility, so it's perfect for a paleo pizza. There are tons of pesto recipes out there (yours looks good!), and if they have non-paleo ingredients, pesto is easily made paleo because it's made around a base of basil and olive oil. Beware the Ides of March. Pesto's awesome, but it takes a good amount of olive oil to pesto-cover the surface area of a pizza. And depending on your perspective of olive oil fat ratios, that may or may not be good. Meat/cheese/veggie pizzas may have fat ratios close to foods our ancestors ate. – Kamal Nov 1 2010 at 15:44

Re: omega 6 content of olive oil- this is assuming a pizza isn't something a person is trying to eat all of the time, and just answering the one question. I don't need to be badgered on the omega 6 profile of olive oil, thanks :) I am simply offering alternatives when people ask for them. I don't personally down olive oil by the bottle, nor do I worry much about my omega 6 consumption. I love pizza too!

You might want to give Meatza a whirl:

Once you have your crust (mostly ground meat/spices/maybe parmesan cheese), you can top it any way you like - just skip the tomato sauce or any other problematic foods.

I like olives, anchovies, mozzerella and pepperoni (and tomato sauce - but that's me).

It's not quite the same as pizza, but it'll do in a pinch. I thought about making it for around 9 months and finally did - I really liked it. But since I'm the only one eating it, it may inly be a once every few months thing for me.

As a nightshade-avoider, here are two things I want to try:

  • Replace tomato sauce with pureed butternaut squash
  • Make a white pizza/meatza with different kinds of cheeses and caramelized onions

Please note that many packs of shredded cheese contain potato starch.

I know this is an old thread but I like cheese, black olives, mushrooms, basil, sauteed onions. You could make this on portabella mushrooms.

I don't think you can do it without tomato sauce, at least not well. For the crust there's almond flour, coconut flour, cheese based, flax based. do a google search. I have yet to find a really good one though.

I second the Meatza recommendation; I made one a few months ago, and it was great! I've had good results with almond flour crust also; Elana Amsterdam's Gluten-Free Almond Flour Cookbook has a recipe. Of course it's not quite the same as "real" pizza, but I thought both were great in their own right.
