Aside from fats that are important co-factors for many vitamins and nutrients, how much, if any nutritional benefit is lost in taking dessicated (powdered) organs like liver, heart, thyroid etc?

None, really, unless it states that certain elements have been extracted (like thyroxine-free thyroid gland). But to equal a 4oz piece of liver, you'd have to swallow a lot of pills. I take nutri-meds natural thyroid gland which actually includes the T3 and T4 hormones because I don't want to take Armour. – D.K. Jul 12 at 0:44

Not sure what the nutritional differences would be, but a lot of people take "liver supplements" by chopping up a beef liver into tiny pieces (about as big as a pill/tablet), freezing them, and then swallowing a couple of 'em whole.

I'm not quite that brave yet. I don't eat anywhere near enough offal. I love chicken liver pate, but when it comes to beef, I still have to hide it in meat loaf and chili. Ick...

When dealing with dessicated organs and glands, it's one area where I'd go out of my way to buy from a reputable brand, even if it meant paying more (which it will). Dr. Ron's has a good line, but it's $$$.

There's always various liver based sausages, and they taste awesome. Things like head cheese and braunschweiger are made with liver and/or heart and taste very delicious. – raydawg Sep 21 at 10:39
