Olive oil is claimed to be good and healthy for people. Is it always healthy? Do you have experience with cooling and freezing of olive oil? Is it a good oil for winter?

Olive oil has a high omega-6 content relative to animal fats or coconut oil, so personally I wouldn't make it a staple. As far as freezing goes: http://www.oliveoilsource.com/page/freezing-olive-oil |

Olive oil is certainly a better oil than many other vegetable oils, because it's high in monounsaturated fat and has less omega 6 fatty acids than most. But if you're going to use it, only use extra virgin, and don't cook with it! The best choice for fats are saturated, especially if you are cooking with them because they are stable. Olive oil can have up to 25% saturated fatty acids though. I also think the more fresh the oil the better it is, I don't trust the oils sold in supermarkets because they could be old and rancid. Exposure to light, heat and oxygen all cause oils to degrade over time. So only buy olive oil in dark glass bottles that are small to reduce exposure to air. |
