So I am struggling to find a consistent breakfast. I used to eat eggs every morning and that worked for a few months. Then eggs stopped sitting well in my stomach and giving me some gas. I switched to fasting in the morning but that made lunch a pain. I have tried almond butter and celery but that is now going tiresome and I eat way too much. I work as an EMT so eating salads and veggies has become tougher because it is really a sandwich-based lunch profession. Even if you skip the burgers, you can only eat "healthy" by stopping at Subway and getting a foot long. If you order a salad, you get 4 bites in and it's time to do a call (where as you can eat a sandwich while driving or riding shotgun). I want to try to get salads into my diet again because I did great having them as a regular lunch at my last job. Tons of fresh veggies, olive oil, and some grass fed meat, what's not the love? Has anyone tried this out as a breakfast meal? Could the veggies not sit well in your stomach? How do you prepare the meat for the salad? Do you use different meats? I think I am going to try to change up my breakfast every now and then to avoid burnout but I'm wondering if anyone has experience in this.

If it works for you, that's all that matters. I usually skip early breakfast, maybe coffe w/ cream. Late breakfast is sometimes a veggie/cheese omelette. But I'll eat any leftover for breakfast... – Dave S. Nov 3 2010 at 14:18

I gave up the notion of certain foods being for breakfast. I eat eggs at any time. Breakfast for me is some kind of meat, some kind of fat, and some kind of vegetation. This morning I'm eating chicken gizzards with sauteed slaw mix.

My paleo version of a to-go breakfast or lunch is a frittata (or 'egg muffin') - using ground beef, or diced chicken or bacon/ham, and whatever diced roast-able veggies you like, chuck the fillings into muffin tray holes, fill up with beaten egg, and bake until egg is cooked through. You can even wrap the whole thing in bacon!

It's somewhat rare for me to eat breakfast or lunch these days - I'm not hungry, and it's not convenient. I'd prefer to sleep in and get work done during my lunch time (if I get any), so I can go home a.s.a.p. and relax with a big, tasty dinner and no homework!

I second the meat muffins, so easy and awful yummy. When ground bison or lamb are on sale in my area, they go right in with a little bacon fat and black pepper. – Jennie Apr 7 2011 at 12:26

I wouldnt count the subway salad, iceburg lettuce has no nutritional value which is what our local Subway uses.

Try these ides.

  1. Make Bacon ahead of time and reheat in a toaster oven or microwave, or eat cold. You can dip this in some premade guacamole from the night before.
  2. I like Sausage and steamed veggies, I like the whole foods pork brats.
  3. Cup of Decaf with 3 TBSP Heavy Cream :)
  4. Chicken rollups. Use a large romaine or other nice leafy green and roll up fresh tomatoes, olives, and rotisserie chicken. You can do this for your sandwich type lunch too.
  5. Slice Jicama and dip in Guac.

Ah lots of ideas....and I am with you eggs got old quick.

Breakfast has been the hardest. Eggs are great, but I try not to eat them every single day (or any other food for that matter). I haven't tried salads yet, but the idea of greens for breakfast somehow doesn't appeal to me. I know some people just treat breakfast like any other meal and have regular food, like leftovers from dinner.

I tend to prefer something a little lighter. I usually rotate eggs, sausages, and smoothies (e.g. berries and heavy cream). Or if you're especially into dairy, there's high-fat cottage cheese or Greek style yogurt with berries. If I have more time, or for brunch on weekends, omelettes and frittatas are great, and you can switch up the fillings. I guess you could always make these ahead of time and just re-heat in the mornings. But then again, those are still eggs.

what i eat for breakfast:

sliced roast beef, rolled up. on the side: a handful of still-frozen berries.

a pile of homemade chicken salad, made with roasted chicken, cilantro, olive oil

kale salad, made in a big batch the night before: ribbons of lacinato kale, quickly sauteed in olive oil and cooled, then add some sliced red onion, olive oil, and toasted hazlenuts (with some parmesean grated if you eat cheese)

a little package of olives, raw sliced red pepper, and leftover protein

leftover meatloaf, cold

A "stir-fry" type of meal has solved my egg problems. Just some sauteed veggies and meat! It can have several variations, and goes down quickly! I like a little guac on the side. It's not exactly a salad, but it hits the spot, is more of a breakfast food, and I get my veggies.

Do you have Jimmy Johns sandwich shops where you are? They make an "unwich"- just a sandwich with lettuce instead of bread. It's wrapped up like a normal sub, so it's easy to eat on the go!

I make a full meal for breakfast. Ground turkey browned with seasoning and in a Paleo marinara sauce, a raw vegetable salad with olive oil and balsamic vinegar dressing. 'Course I do sacrifice some sleep to get that cooked in the morning. Sometimes I cook extra at night and eat the leftovers for breakfast. It works for me but I realize not everyone wants to eat steak or pork chops with salad for breakfast. Hope you find something which satisfies you.

I am loving avo cucumber smoked salmon and olive oil nice and fresh and it keeps me going till 3 sometimes I add a poched egg or coffee on cream yum !

I often eat salad as my first meal of the day, but it's usually steak salad! ;-)

Try using a lettuce or cabbage leaf to make a "wrap"... put in all your usual meats, veg, dressing, etc and wrap the whole thing in one+ leaves (the more you use, the sturdier it will be). A lot of sandwich places are willing to do this too if you ask nicely.

I've been making these for about two weeks now for breakfast but with bacon instead of ham. They're pretty good cold so you can make them a few days ahead, grab them, and go.

We got tired of eggs quickly. Especially on workout days....burpees and eggs were not a good combo! I found a blueberry dish on the EverydayPaleo site that we enjoy occasionally.

Here is a recipe for a wrap type bread..

Bread

Batter Bread (a thin soft bread suitable for toppings or sandwiches)

6 T oil 1 t raw honey (optional) 3 eggs 1 C pecan nut meal (i use almond meal) 1/4 C arrowroot

Combine all and pour on to a greased cookie sheet (approximately 12x8x1/2 inch). Bake at 325 for about 15 minutes. Cut in to desired size. – Lorraine Apr 7 2011 at 1:41

I have a dry bitter green salad, pork belly, and eggs every morning. Sometimes I throw in some homemade sausage.

I workout in the morning and always have something leftover from a recent night's dinner. Grassfed ground, pork loin, chicken breast, whatever. I usually eat mine with starchy carbs but usually also have some broc in there too. Salad sounds like a fine option to me. I keep a baggie of crisp bacon in my fridge at work for go-to snacking. Tough to go wrong there.

i apologize if my ultimately personal [and thus biased] point of view would hurt anyone's feelings but the very notion of 'breakfast' (=something habitually eaten in the morning) seems just so... un-paleo - something akin to soy burger

I have dark chocolate for breakfast. Fructose goes preferentially toward replenishing liver glycogen when glycogen stores are low. It's also a nice way to start the day and it wakes me up.
