Generally for breakfast, we have eggs and some type of pork breakfast meat (bacon, sausage, ham). What are some breakfast ideas that include other meats, and/or no eggs. Preferably a short prep/cook time, or things that can be made ahead.
Get out of the whole "breakfast food" mindset. If it is real food, it's fair game. Throw something in the crockpot before you go to bed. I've had pulled pork for my first meal. I've also had salad, leftovers, tinned fish, grilled chicken, etc. This morning, it will be bulletproof coffee.
Grass fed ground beef. I know you said and/or no eggs, but it's really good to fry up a burger and then put an over easy egg on top of it. Then eat it with knife/fork. If you do dairy, top it with sour cream. Also, you can add jalapenos, salsa or hot sauce. Really, really good.
And of course, smoked salmon. I haven't seen any discussion on how paleo it is, but I would think it's pretty safe. You can eat it with some fresh sliced onions and knife/fork. If you do dairy, roll it up around some cream cheese.
I love freshly cooked burgers for breakfast. Fish or cold leftover steak, or whatever else was leftover from dinner. Leftover dinner protein on salad with a big plop of guacamole makes a great breakfast.
I seriously eat grass fed ground beef (85 lean) almost every single day, sometimes with a couple of over-easy eggs chopped into it, sometimes with salsa stirred in, sometimes just with salt and pepper.
I was inspired by the post over at thepaleomom.com where she made sausage patties--don't know why I never thought of that. Anyway, I mixed ground fennel and anise seeds, paprika, and salt into a half-and-half mixture of ground beef and ground lamb. It works better when it's not in patties, though--stays more moist when it's in smaller pieces.
As others have said, I eat whatever whenever. Lately, I've been making meatballs. Easy to make ahead and reheat and lots of variations. Spaghetti and meatballs (mashed cauliflower to 'replicate' pasta), BBQ meatballs, Buffalo meatballs, turkey dijon mustard meatballs, etc. I like to sometimes add a fair amount of finely chopped veggies (mushroom, onion, bell pepper are faves) into the balls, add an egg to make everything stick together + bonus protein.
Also been on a taco salad kick. I brown & season a couple of pounds of ground buffalo and then it is really easy to add chopped lettuce, tomato, avocado, and hot sauce. This is also a great low carb option.
Just got over a pot roast and pulled pork kick as well. I will also fry or grill a pound or two of salmon or other fish and eat it for all of my meals for a couple of days. I like to sauté large amounts of veggies ahead of time too.
Also, other egg options: hard boiled, deviled, baked eggs (if you eat dairy, you use just a bit of cream but could easily sub coconut oil or just tomatoes, etc), lettuce scrambled-egg roll-ups with avocado &/or other veggies.
Some of the paleo muffin recipes will also provide a nice amount of fat and protein. Good luck! Happy cooking! :-)
