I'm reading alot about carbs.. amount, eating around a workout.. etc. What are the "carbs" on Paleo?? (I know the biggies that are eliminated following paleo..) . Are veggies called "carb" on paleo or are we talking about the fruits and starchier veggies like sweet potatoes?

Sounds like you hit the nail on the head for your own question. Vegetables and fruits are paleo carbs. Some just have more than others. Broccoli is very low calorie, thus low carb, where as sweet potatoes are much higher. Some varieties of squash are higher carb, such as butternut. Some people consider rice a safe carb, although most say it is not technically paleo. With that, we are splitting hairs. Fruits are definitely carb and paleo, but some people mistakenly try to associate paleo with "low carb".

^ guess it depends on what part of the paleolithic era you speak of, and what region/species of hominid your referring to. Before cooking, there was no tubers, only fruit and nuts re: carbs. Theres evidence for both, but meat was more prevelant. After that theres evidence of some fruit consumption, tuber consumption and nut consumption, even a tiny bit of grain consumption. I think there probably is reasonable reason to associate paleo with low or medium carb. – Jamie Jul 19 at 1:25
Fruit and nuts are seasonal, edible tubers couldnt nessasarily be found in every region, and early man was nomadic. The most reliable food source for a nomadic human is meat, because it doesnt require as much identification/testing, especially during winter seasons. Thats not to say it was zero carb, surely there would of been times of difficulty hunting and absence of game, and during the correct seasons, carb availability would have been quite high, and easy. But equally there would have been long periods of little plant food. – Jamie Jul 19 at 1:29
Humans must be able to survive both circumstances, both mostly meat, and higher carbs, with some meat. The broadness of our modern huntergatherer diets confirms this adaptability. So paleo can really be both moderate carb, or low carb. – Jamie Jul 19 at 1:30

@jamie....well said. Different HG tribes ate different diets, but many, if not most consumed meat whenever it was available. It is good for us now to be able to handle some carbs and times with little carbs. – RaiseFitness Jul 19 at 3:04
