So I´ve been reading a lot about how good sauerkraut is and I have even started making my own. Now the good thing is I really like it... but my question is, can you eat too much of it, so that it would end up having a negative effect instead? How much per day would be a recommended amount?

I have cut down my kimchi intake over the last six months. I used to eat about 6-8 ounces daily with dinner. I just thought it was too much, too often. Now I have one singl ounce every other day. Nothing bad ever happened to me but I began to fear not having it around – ben61820 Jul 19 at 23:51

IMO it is self limiting. Whatever you can consume is probably just enough :)

I would think that if you ate too much of it, you would feel the rather immediate effects like bloating and diarrhea.

I've seen other people go off on the sodium content if you eat too much, but I don't know about that.

1/2 cup is more than plenty per day, imo.

Campbell-McBeide wrote about excessive "die-off" off the bacteria in the late portion of your digestive system. It takes time, according to her, to develop the ability to consume large amounts of probiotic bacteria. However, the period of time for each person varies. Some of her patients have taken a few weeks others a few months. I feel that her position on this may be true considering my experiences with large amounts in one sitting that lead to gas and bloating. I've never felt any painful or otherwise deleterious effects but my wife did! ;-)
