I've never had any issues with dairy products. I've been on a strict Paleo diet (no grains, legumes, dairy) the last 8 days.
I added cheese and sour cream to my fajitas last night. This tore up my stomach really bad. I had the same meal without the dairy earlier in the day, so I think the only thing it could be is the dairy.
I was "lactose intolerant" as a kid, and I seemed to grow out of it (I really just got used to feeling like crap). After going paleo for a short time, all of my childhood "allergies" seemed to reset, and now I'm ultra sensitive to dairy/grain.
After being three months paleo, I decided to have a cheeseburger for my birthday dinner. It was a mistake on my part; it tore up my stomach and I was sick the rest of the night. The next day, which was my actual birthday, I decided to get doughnuts for breakfast. I ate one and spent the rest of my birthday laying on the couch. Suffice it to say, I will not be going back from a paleo diet. Haha.
I don't know how fast your body can lose its ability to process dairy but I would think that only 8 days is not long enough. Given that assumption, it could have been that the additional sour cream added more fat than your system is used to processing and that caused the issues. Try upping the fat ratio slower and see if that helps.
I gave up the heavy cream in my coffee for TWO DAYS and went back on day three for a "treat." HA! I was "treated" to multiple trips to the bathroom and much gurgling and loud intestinal complaining....the cream was the ONLY thing that had changed, so yes, it's possible to reset one's sensitivities that quickly. (BTW, I hesitate to call this an "allergy," because I have seen what a true food allergy can do....but sensitivity, yes, it could be that....)
I had a few pieces of bread and homemade banana bread after my Whole30 ended last week. The following 4-5 days were quite uncomfortable! I couldn't believe that such a small amount of grains (in the SAD world) would lead to such discomfort. I'm definitely going to keep my 'treats' to a smaller amount the next time.
I think this begs a good question I don't know the answer to. Is an 80/20 rule a better way to go, knowing that there will be those times when non-Paleo foods present themselves, in order to prevent the ramifications of consuming the foods on a less than weekly basis? I say this with respect to dairy and grains other than those containing gluten. I used to be able to tolerate some ice cream or other dairy on a once a week basis. I eat it less often now, and had some this weekend while celebrating my mom's birthday. Ouch.
I had vanilla ice cream last night after dinner. I had a simple ground beef omelet with spinach (the only ingredients were grass fed ground beef, omega 3 eggs and lots of spinach).
I had the ice cream about 15 minutes after dinner as a treat. It tore my stomach up. This is the only thing I can contribute it to.
I just find it crazy that I have any type of dairy intolerance. When I was in high school 10 years ago, I would often knock out a gallon of milk w/ plenty of shakes, etc in one day. Obviously, I was trying to gain weight then.
