The most convenient time for me to work out is after getting off from work, before dinner. At this point, it has been 5-6 hours since I ate lunch, and it will be 30 minutes - 1 hour before I eat dinner.
I believe waiting 30 minutes - an hour after workout before eating is fine. I also see a lot of people who fast for workouts.
My question: is 5-6 hours since my last meal before working out too long? Should I eat a small snack 1-2 hours before work out?
Also, as for my dinner after my workout, should I just eat what I would normally eat for dinner, or should I add something extra since I worked out? I typically eat some form of beef, veggies in coconut oil, and a salad for dinner. Do I need to add something like a sweet potato, or only if I feel bad after the workout?
There is no reason you need a snack before working out if you at 5-6 hours before. I regularly do workouts at that time frame, and occasionally do long hikes in the morning having only eaten the night before. Your body will be just fine, and if anything it will help you be fat-adapted. As far as your post workout meal, what you reference sounds great.

Are you weight stable, or are you trying to lose or gain?
Timing is EXTREMELY overrated. If you feel good working out fasted do it. Don't wanna eat right after your workout? Don't have to. Just be sure to hit your macro goals for the day at any point and you will be fine.
