Hello!

I bought two pork jowls at my farmers' market this morning without a clue as to how to cook them. Does anyone have suggestions or advice for preparing these tasty looking cuts?

I would marinate them in garlic, salt, black pepper and whole grain mustard overnight, then sear them until thoroughly brown, add minced green pepper, onions and carrots, when the vegetables are lightly brown, add 1 cup of white wine and 1 cup of chicken stock, bring to a simmer, cover and braise for 3 hours. Enjoy!

Besides adding to stews, I've always had mine sliced into bacon which I'll fry up in a cast iron skillet over med-low heat. I love it! You could also cut it up into small pieces and simmer it along with some collard or turnip greens in chicken or veg stock. You can add all sorts of veggies to it, but my favorite is diced onion.

Oooh! I've been looking for a recipe to make old school collard greens -- with a ham hock! Any ideas? Don't think I'll get anywhere near the same flavor just using bacon, and I saw ham hocks at the store. (Not pastured pork, of course, but it still got me thinking.) – Amy B. Jul 29 at 1:59
