For those of you who LC/VLC do you count the carbs from non-starchy vegetables such as leafy greens, cucumbers, zucchini etc?

I guess I have to say no. If I don't add any fruit or potato that day I just consider it low carb. I don't eat enough squash type vegetables to make a difference.

Depends on your severity of insulin resistance.

I'm very sensitive to carbs (pre-diabetic and they raise my glucose levels) so yes I do.

I don't. Vegetables like spinach, kale, chard etc. are mostly fiber anyway.

I also don't. I mean, Cron-o-Meter does count them, but I don't "count" them in the sense that I do not worry about them. I never "count" carbs from leafy greens, and I also do not "count" carbs from things like eggs, beef liver and coconut milk. Those (usually) represent a small amount of carbs only, and they are usually well-distributed during the day, so I don't think they have a huge impact over my insulin levels.

When I counted my macros, I counted all fo them. Now I think I have a good feel for my nutritional needs, so I don't really count anything.

I don't really count carbs, or calories in general, on a regular basis. I have put in a few sample daily meals in a calculator to get an idea of where I'm at, and once in a while I'll go plug the numbers in to see if my mental estimates are still fairly accurate. So far, so good.

I would not count carbs for leafy green vegetables.

I don't because according to the Jaminets (perfect health diet) most of the carbs in non-starch veggies is actually digested by gut flora and very little glucose makes it into the blood stream.
