I am 5'3" and 142lbs. I just recently lost 17lbs, using weight watchers. I also workout 5-6 days a week, with various activities. I am stuck at a plateau, but I am confused on how Paleo works and if I need to know how many calories I am consuming a day? Or is it that you eat 3 meals a day and 1 snack??? Any suggestions?

Welcome to Paleo, you will find life much easier once you dont have to keep count your food.
Paleo is not so much a "diet" with rules as a choice to eat the way our ancestors did. There are endless variations that one may choose from in eating this way. Most followers rarely eat processed foods and this results in low overall carbohydrate consumption. My meals consist mostly of meat (with some veggies) and I eat 2 or 3 times a day depending on whether I'm hungry or not. My wife, on the other hand, eats meals that consist of mostly vegetables, and she tends to eat 4 or 5 small meals. Every one is different and there is a lot of freedom to do what works for you. I know it may sound crazy that we don't have to count calories, but both my wife & I have continued to lose weight, just eating only when we are hungry. It's amazing how different hunger is once you get the sugar/insulin monkey off your back. Good luck!
Paleo is not more effective for weight loss than other plans. The real point of paleo is that you can optimize your health by eating real food instead of processed junk. You can follow any other plan that works for you and make it paleo. Or you can just try paleo and see what happens. Many just eat based on hunger and that seems to work well. Some have to watch their carbs and others watch calories. You have to figure out what will work for you as nobody here can tell you for sure. We all respond differently.
