I'm obsessed with them. And they taste and have the texture of string cheese! YUM! Ingredients: hearts of palm, water, citric acid and salt. Are these paleo enough???

I think hearts of palm are fine Paleo-wise, and so's the salt and citric acid. The only thing I'd be concerned about is the BPA in the cans, but how much you worry about that sort of thing is up to you. If you can, I'd suggest trying to find some in BPA-free cans, if available, or packed in glass instead.

Palm Hearts are a great vegetable for a Paleo/Primal diet. Decent fiber. Even a little protein. A good source of Potassium, along with some moderate Zinc. Best to avoid in a can, unless you know it is BPA-free. I get mine in glass jars at Trader Joe's. (And yes, they remind me of string cheese too!)

I love them too! I have been slicing them and using them as a pasta substitute.
