I have a bag of coconut flakes that I'm SUPER excited to turn into a jar of coconut butter. I've found a recipe by The Clothes Make the Girl that includes salt and vanilla or almond extract, in addition to the coconut, and I'm wondering if anyone's tried any other flavor additions or variations to mix it up a little bit?

Toasted Coconut-Macadamia Nut Butter Recipe (I use the term loosely): 3 cups unsweetened coconut (shredded or flaked), 1 cup macadamia nuts, pinch of sea salt Toast half of coconut in large pan over medium heat until brown and fragrant. Remove and let cool. Repeat with macadamia nuts. Add toasted coconut and remaining 1-1/2 cups untoasted coconut to food processor, along with macadamia nut and salt. Process until nutbutter-y; 5-10 minutes. To. Die. For. Seriously, proceed with caution if you decide to make this--know full well that you will eat the entire batch in one sitting and likely bite anyone who dares to attempt to make you share. Oh, and whenever I make nut butter, I feel like God. Anyone else get this sensation? Anyone...? |
