New to bone broth and a very inexperienced cook, although getting better each day. My question about bone broth is this: Can I cook one batch in two 12 hour (for example) sessions? I don't want to use a crock pot (for many reasons I won't go into) so I need to do it on the stove. But I'm not comfortable going to bed while it simmers overnight. So could I let it simmer all day, then put it away in the fridge overnight and repeat the simmering the next day to finish? I know simmering longer is better so I don't really want to do it for only 12 hours if 24 is so much better.
Probably a dumb question, but like I said, don't know much about it and don't want to waste time or food. Thanks so much.
