A lot of the butchers aren't keeping bones any more. Apparently they don't see the bones as anything useful. So does anyone have any idea where to get the bones from in the UK?
Abel and Cole now sell beef bones and chicken carcasses for a few pounds.
I usually get mine from the farmer's market - if I call ahead they will bring me anything from chicken carcasses to pigs trotters, and usually it's either free or something ridiculous like £1 for a huge bag.
Make friends with your butcher or farmer!
There are many sites in the UK now selling organic meat for delivery. The best ones also do bones, fat trimmings, liver etc. It's not actually that expensive either, once you're eating paleo and therefore eating less.
They might not have them on demand, but if you ask they might be able to save some for a pick up later in the day. Most butchers do a lot of their cutting early in the day and toss stuff as they work if it isn't needed.
Aside from looking around more butchers until you find one that does stock bones, you can build up a reasonable stock of bones by cooking joints repeatedly and saving the bones from them. Also, my local Morrisons sells bones, but for a fairly ridiculous price (given that my old butcher would give them to me for free).
I ordered on and Tuesday just got a delivery today (Thursday) of wild venison burgers, organic bacon and a kg of beef bones from Abel and Cole - check out their website its great! The beef bones were £1.50 but I had to spend at least a tenner and since I'd be buying meat anyway it wasn't a problem. This weekend will be BONE BROTH TIME!
Word of warning - the wild venison burgers contain breadcrumbs and gluten - boooo! I ate them anyway but I won't be ordering them again.
I've been getting bones from my local butcher here (South West UK). It's all grass-fed meat. So far they've been free, but I live very close and buy all my meat from them despite the high prices, so perhaps that's why.
I've been making tons of bone broth. It is absolutely gorgeous in basically any savoury recipe that requires liquid.
