I am trying to eat paleo. I do most of the cooking in the house, and we have a roommate who'll eat anything, but he's sensitive to eggs (GI issues, not an allergy). We're also not huge egg eaters either. I get eggs and never seem to be able to use them up.

Is there an eggless paleo binder I can use in recipes?

For instance, I need a eggless paleo ranch dressing recipe.

I also need an alternative for egg a binder in salmon cakes, and paleo hash browns.

If it cannot be done, that's fine. As long as I can get away with as little egg as possible. Small amounts in commercial dressings don't seem to bother him much. The issue seems to be proportional to the amount of egg that is consumed.

I use coconut flour as a binder. It works great. Don't go overboard with it though, it is VERY thirsty and will suck up all of the moisture if you use too much. I'd start with a small amount, blend, then add more if you need it.

When making salmon cakes and meat loaf, I'll need an oil and maybe some extra moisture? Does that sound about right? I have been contemplating getting some coconut flour for some time now. I actually do not use much bread or flour. If it's multipurpose, I'll justify it as a new kitchen staple. I also am considering using it for slow cooker liver and onions (brown first with fat and flour). – Ashley Aug 21 at 15:47
When I make stuffed peppers, I use coconut flour or cooked rice for the binder. I also add some tomato sauce or paste (depending on the mixture's looseness). I don't think you need to use any oil, though. – MiMintzer Aug 21 at 16:05
I go by feel. If the mixture feels too wet, I will add a bit of coconut flour and go from there. Sometimes I get a bit overzealous with the coconut flour and have to add some moisture. It doesn't impart any flavor, unless, of course, you go overboard. I've never used it to bread any meat, but I have used tapioca flour to bread liver. – MathGirl72 Aug 21 at 16:17

You can mix a couple tablespoons of water with a tablespoon of ground flax seed. Works great.

I wonder if it is the quality of the eggs that is bothering him. Are you making sure to get soy free eggs? That can make a big difference in digestability.
