I've been doing Paleo for a whooping 2 weeks now :) and my wife is beginning to see the value in it.
She is used to the energy/carbs she gets from bread in the morning: 2 slices of "whole" wheat bread (bad) plus some type of cheese (good).
Would you have any Paleo suggestions for someone transitioning to Paleo, providing her with the necessary energy? She's eating more Paleo meals during lunch and dinner. Breakfast is kind of a challenge so far.
I'm aware your responses may be "she needs to get used to eating more fat and protein", so I'm just checking if this is the answer, or if there's more to it :)
The answer to everything is eggs and bacon.
Your wife will find that she doesn't need the glucose kick from bread in the morning once she's fat-adapted. The transition is pretty tough, though, so you might try using fruit to bridge the gap.
I love a baked sweet potato for breakfast. Put some butter and cinnamon on it - yum! They're super easy to make, too: just microwave for 5 minutes (turn it over halfway through). Sweet potatoes are carbs, but they're non-toxic Paleo-friendly carbs (no gluten/other gut irritants, high in nutrients). I eat it with 3-4 hard-boiled eggs.
Like your wife, I don't do low-carb well. It doesn't mean I can't do Paleo!
I was one of those people who really, really LOVED my bread in the morning. I went cold turkey into Paleo and switched to bacon and eggs. However, I do like to have half an avocado with them or on days when I feel like I need more energy (or on the weekends) shredded sweet potato hash. I don't miss bread!

My answer would depend on what you consider Paleo/Primal or close enough for a transition period. I usually keep my "carb-bombs" for night cause that's what works better for me, but sometimes on days off (when it doesn't matter so much if I get sleepy from big carb-load) I'll eat a potato with breakfast. I usually eat my beloved eggs and bacon, or eggs and sardines, and I'll fry up (usually in bacon grease) a home-shredded potato for hashbrowns to go with it.
For less of a carb-bomb but still some carbs, try some fruit with the protein and fat.
For your wife who is transitioning, I'd at least make sure it's a higher quality bread that she's eating. Ezekiel bread products are really great for transitioning, and I used to eat it in high school with no issues. It is sprouted and very low glycemic (if that matters to you/her). If there were one non-paleo food I were going to add back into my diet, that would probably be it. I loved that stuff with eggs, sardines, or turkey and avocado in between. Those all would make good breakfast sandwiches for her to try. YOu can find Ezekiel bread in the Freezer section at Whole Foods, in the bread section at Trader Joe's, or I think it is even available in the freezer section of most decent non-health food grocery chains.
I think that stuff would make a great transition food, as the sprouting gets rid of all the nasties and it's even labeled as "diabetic friendly" (it has a GI of 35 or below).
