So it seems that I may have a coconut oil intolerance and my roommates have complained about the smell of the rendered beef and lamb fat I like to cook with, so I was wondering if anyone knew of any sources of quality duck fat, chicken fat, or any other paleo-friendly fats. I'm unfortunately pretty sensitive to dairy as well.
Additional Question: Since I am allergic to tree nuts and potentially coconut, would palm oil be okay to use or not?
Whole Foods sells duck fat and so do most upscale stores. It's smells really nice too, kind of like french fries so I don't think you will get any complaints. If you can't find it in a local grocery you can get it here: http://www.dartagnan.com/Search.aspx?key=duck%20fat
I get all of the duck fat I can use from roasting a couple of duck breasts every couple of weeks, you would be amazed how much fat you get off just 2 pounds of duck breast.
Ghee has been purportedly well-tolerated by dairy-sensitive folks. It's basically the pure fat from the butter, the milk solids are discarded. It has a very intense butter flavor though, some people may not like it. I would not recommend smearing it on anything as one would with butter--it's best for cooking only.
The best fats to cook with are saturated fats, because they don't oxidize as easily under heat as the unsaturated fats do.
So, the best fats for cooking would be lard, butter, ghee or coconut oil.
MUFA omega-9 oil like olive oil is also OK, although it's not as good as the SFAs.
