I don't want to eat eggs EVERYDAY, right? Another favorite breakfast is pumpkin seeds, chia seeds, sunflower seeds and flax with a smushed banana and coconut oil. Devine! But any other non-egg options?
Just eat what you'd normally eat for any other meal.
I may be wrong, but I think it's just a cultural thing that certain foods are 'breakfast' foods and others aren't. I'll often have stew or something similar in the morning, either leftovers or I'll put something together to go in the slow cooker the previous evening so it's ready first thing in the morning.
It seems a little wierd at first but you soon get used to it.
Leftovers from the day before. This morning I had a hamburger on top of leafy greens. I always cook extra so there are things that can be quickly thrown together for a meal. I've also thrown a chunk of meat into the crock pot before bed and woke up to a tender brisket, pork roast for shredding, or a whole chicken falling off the bone. There is no need to stay in the "breakfast food" mindset. Just eat food!
These are not quite paleo but great occasionally.
Blueberry Crepes - 3 eggs, 1/2 cup coconut milk, 1 Tablespoon maple syrup and pinch of flour(whatever you use: coconut, almond, etc.) Butter your pan, pour in half of batter and toss some blueberries on top.
Apart from what the others said, leftovers/just normal food (AND steak, that needs extra mentioning!), gluten free beef and/or lamb sausages with stir fried vegetables (sauerkraut is a really amazing addition) plus some extra fruits, e.g. (green) bananas fried in coconut oil or just some berries, is simply amazing.
