Ok, so some of you will think I am crazy after saying this, but I just had my first plate of bacon today. Oh. my. gosh. I am in love with the stuff! How much do you all eat on a regular basis, how do you cook it (I put them on a baking sheet at 375 degrees for 20min), what do you like to eat with your bacon and lastly, what are your favorite recipes that include bacon? Man that stuff is great!

I am LOOOVING Coleman brand bacon - it is naturally cured, no hormones, nitrates or nitrites. AND IT TASTES LIKE CANDY.

I put them on a foil-covered baking sheet in a cold oven, then set the oven to 400 degrees and they're PERFECT at 17-20 minutes.

Trader Joes has a great house brand of uncured bacon. YUM! Also, the Applegate Farms Organic Sunday Bacon is good as well :)

eat that bacon

I do either pan-fry or oven, depending on how much I'm making, what time it is, and what I'm making it with. I probably get a package of bacon a week (I think it is a pound). I eat about 2/3 of it, my roommate eats the other 1/3.

Bacon is amazing all by its very own self! Eggs, of course, are an obvious choice. Put a ton on salad! Wrap scallops, other meat/seafood or veggies in it and grill. Dip it in a little dark chocolate (srsly, try it!) Bacon and avocado were meant to be together.

And of course... don't forget to save that PRECIOUSBACONFAT for cooking later (great to fry stuff in, or add some of the grease to steamed/stewed veggies for a little more fat&flavor), and making baconnaise! http://www.seriouseats.com/2009/10/the-food-lab-meatonnaise-mayonnaises-mayos-bacon-lamb-duck-beef-fats-science.html

I cook it on the stove top and then fry some veggies or sometimes even seafood like bay scallops/oysters/crab meat in the bacon grease. But if I'm gonna make an omelet, I'll crumble the bacon and add the bacon & veggies to scrambled eggs. What I'll also add crumbled bacon to is homemade mayo and put a nice big scoop of that onto bay scallops.
You could also wrap bacon around some jumbo scallops and bake those in the oven. I made these bacon-wrapped scallops for Christmas dinner and everyone loved it.
Several times a week, I will cook sliced baby red potatoes or Yukon gold potatoes in bacon grease until they're soft and then I put some of my homemade garlic aioli sauce on the potatoes. It is so good.
