So in an effort to gain weight while running 30+ miles/week and using weights at the gym, I'm adding more carbs to my diet and the easiest/cheapest way to do this, for me at least, is to eat white rice. I'm Asian so it's not hard to find white rice, but I don't like how plain and bland it is.

I don't like it plain, but I've tried it cooked in a broth/soup from chicken bones, red dates, goji berries and Chinese medicinal herbs, and it's not bad. Cooked in coconut milk, it's also really nice and rich and coconutty.

If you include white rice in your diet, how do you prep it to make it taste not so plain?

Coconut milk for desert, bone broth for dinner with seaweed and chili. It's not the "main" event for me, so I'm pretty happy with it as is. Have you tried rice noodles too? There are some really basic brands made of just rice, nice change of texture. – JeJ Sep 24 at 2:52

Just make a curry and pour it on top of the rice.

My favorite way is to cook rice is in broth, to make it more nutrient dense. Then I toss it with lime juice, salt and pepper and mix in a full bunch of minced cilantro. Pile meat, avocado and salsa on top of the rice, with maybe a little cheese and/or soured cream if you do dairy. This is very similar to Chipoltle's cilantro-lime rice - SO good!

Milk (or coconut milk), raisins, and cinnamon.

I eat white rice mainly for bodybuilding goals but my fat macro targets are high. My quick method for making it tasty and calorific is to add in around 4 oz of fried lamb or beef mince and usually 1 oz of grass-fed butter. I'll often fry an onion up with the mince.

I just had some rice for lunch with white fish and added a cream-based curry sauce.

I make a sauce out of chicken broth, a tiny bit of orange marmalade (I know its not 100% paleo) soy sauce, garlic powder and ginger powder. I heat on the stove and sometimes use a thickening agent to make it less runny and pour it over my rice when its done. Its DELICIOUS. Sometimes I mix it with a little bit of fried pork.

It is easier just to not run.

Cook it normally (just water). Put a bunch on a plate, then pour beef stew on top of it.

1 cup cooked Trader Joes organic basmati rice in a fry pan on medium heat with 2 tbsp ghee, 4 eggs yolks, and 1/2 ounce beef liver lightly sautéed. This is really surprisingly good tasting. This forms the basis of my dinner meal. I add another protein as well. Salmon really makes this rock.
