Egg whites have a number of anti-nutrients (http://thepaleodiet.blogspot.com/2010/01/paleo-diet-q-29-january-2010-update-on.html)

For people like me who have trouble with digesting eggs, is there any way to deactivate these anti-nutrients? It seems that egg proteins are of the hardest to digest, but perhaps the most rewarding to digest when done properly.

No food wants to be eaten. There's all sorts of cross reactivity between human protein and plant/animal proteins/compounds. It's just silly to fret obcessively over tiny potential interactions between our bodies and food. Humans are resilient and able to cope with these interactions.

Just eat real food.

More to the point: If you can't eat eggs, don't. If you can eat eggs, don't sweat the little details.

Thanks for the downvote. I'm not fretting; eating eggs gives me serious problems. The "Ohnoes!" is said jokingly. I know many people eat eggs with no problems. I just wanted to figure out if anti-nutrients was part of why I don't tolerate eggs. – Dan Sep 23 at 14:31

just eat the yolks. raw. that's where all the nutrients are anyway. the GAPS diet suggests this and allergies/irritation/problems with eggs tend to be from the white.

^Just do research on Biotin. Nursling si correct. Cooking egg whites deactivates the antinutrients, but cooking the egg yolks can give you a Biotin deficiency. – BoneBrothFast Sep 23 at 14:20
