From a nutritional standpoint I'd say raw(my own n=1), I've only done it a few times but each time I've felt great after. It does make me squeamish though so I don't really do it anymore and I don't think it's necessary as long as you don't over cook. Besides cooked meat just tastes so darn good.

This question made me think of this video........yuk!
