Hi all, I am looking for the most nutritious paleo foods that are reasonably priced, require little to no prep time, and will fill all of my vitamin/mineral needs. Easy digestion is also a must I am not keen on dried or frozen foods. Lastly, I am not looking to eat massive amounts of vegetables and don't like leafy greens much.

Some foods that I been considering include raw egg yolks, milk/kefir, creamed coconut, salmon sashimi, and raw liver.

What other convenient, fast-prep foods would you add to this list in order to achieve optimal nutrition. Also, what are you thoughts on not eating much fruits and vegetables and basing a diet around animal foods and coconut.

I don't have any suggestions for "instant" Paleo-type foods, but I'll say I don't think there's much of a problem basing your diet on mostly animal foods & coconut. But if you're gonna go this route longer-term, try to get the best quality meats & dairy you can. Remember -- the nutritional quality of the meat/eggs/milk products are only going to be as good the animal's own diet. (i.e., cows eating grass and not soy/corn/surplus Doritos & pastries; chickens eating grubs, grass, & insects in addition to regular feed.) – Amy B. Sep 28 at 20:15
Also, if you want to mix things up just for variety's sake, nothing's quicker than raw veggies. Bell peppers? Cut in half, rip out the seeds * ribs, and eat like an apple! Raw cucumbers, carrots - doesn't get much simpler than wash & eat. (Not gonna get a ton of nutrients that way, but that's not what you'd eat them for. More just for a change of pace and a different flavor or texture now and then.) Might not meet your "easy digestion" criterion, though. – Amy B. Sep 28 at 20:18

wild caught tinned salmon would be my pick. a can opener and a fork and 3 minutes later it's gone.

Sounds like you want something that doesn't exist. Enjoy participating in preparing food and knowing its delicious and good for you. Taking shortcuts and being too caught up with fast living instead of actually experiencing life is what got most people in the SAD problem in the first place.

None of the aforementioned foods will satisfy your nutrition needs in a vacuum or combined, but they do meet your restrictive criteria.

Fruits! Super convenient, just unwrap and eat! Unless they don't have a peel, in which just do the eating part.

Tinned (BPA free), wild caught sardines. Open tin-- add a splash of vinegar or lemon, salt and pepper and you're ready to go!
