So I just tried something a little crazy and it worked! We all know that we are supposed to include grass-fed liver in our diet except some people, like me, find it too disgusting to eat in the usual ways. Yesterday after picking some up from my meat CSA, I just put it, raw, in the Vitamix, liquified it and poured the stuff into ice-cube trays (my daughter asking hopefully, 'Is that chocolate?')

This morning I popped a cube into my morning shake (water kefir, kale, collards, coconut oil, berries, 2 egg yolks, ginger, 1/2 lemon) and I couldn't taste the liver! If anything there is a nice, complex salty aspect to the drink...the faintest hint of blood. I am so happy because I have a source of good organic cheap liver, I could just never bear the stuff. The Vitamix takes care of any textural issues, and the other shake ingredients mask the taste perfectly.

I thought I should pass this on to others who want to consume it but just can't. Try it and let me know what you think.

U might want to note, it is possible to get disease from uncooked liver, like many other meats. – Jamie Sep 29 at 13:54

If it has been frozen for 2 weeks or more, the chance of parasitic infection goes down dramatically, and if it has been handled properly, being frozen most of the time, I wouldn't worry about bacteria. – Happy Now Sep 29 at 15:01
It was frozen for a while before I thawed it, and I am refreezing it in the cube form. Maybe I will temper my enthusiasm and make sure the cubes are frozen for at least two weeks. – tbunchylulu Sep 29 at 16:48
I do this with my kids smoothies :)...works like a charm. I throw in a couple of raw egg yolks for good measure too! – JayJay Sep 30 at 0:07

Just a footnote to the liver in the Vitamix...I have just learned that the Vitamix, in spite of appearances, is not all-powerful. I dumped 2 pounds of mostly defrosted liver in, hit the switch and walked away only to have smoke come out of the bottom and the blender stop dead. In a panic I tried turning it on with nothing in the blender except water and got no response. I spent the last hour poised to order another online since it is the one appliance I use every day. Luckily the $475 pricetag gave me pause because an hour later....it's working!

At least one moral is make sure the liver is completely defrosted...floppy and limp, and maybe only process a pound at a time. Also, if you think you've killed your Vitamix, just wait a while and try again.

In the meantime, I am now so used to the subtle hint of blood behind the bolder raspberry and ginger flavors in my morning shake, having it without the liver cube just tastes anemic.

We are approaching Halloween...;)

sounds like great idea to me! i had liver once when i was about seven... you know, the typical liver and onions deal. god, it was nasty.
