I'm trying to get more meat into my breakfast, since it's usually just eggs and bacon, or eggs and spinach. What's your favorite slab o' meat to eat in the mornin'?
Pork sausage patties! Buy some quality ground pork and throw in some seasonings. I typically cook them half way, freeze them and then you can pull them out and cook the the rest of the way as you eat them.

Sausage is the obvious answer (Scottish Eggs anyone?), so I am going to give a few that are a bit different:
Chicken Thighs -- the dark meat holds up well to eggs. Slow cooked chicken thighs in a spicy red pepper sauce with eggs over easy is AMAZING
Pork Skin and Sock Eye Salmon Skin -- not really "meat" per se, but fried up in some butter and has the texture of bacon but a completely different experience.
Kielbasa -- kielbasa mixed into scrambled eggs, spinach, and mushrooms over zucchini hash browns
Salmon -- Lox and Cream Cheese is a classic. Or with a poached egg and hollandaise sauce.
Shrimp -- Something about Shrimp and Eggs over Gazpacho
