For those of you who LC/VLC do you count the carbs from non-starchy vegetables such as leafy greens, cucumbers, zucchini etc?
I also don't. I mean, Cron-o-Meter does count them, but I don't "count" them in the sense that I do not worry about them. I never "count" carbs from leafy greens, and I also do not "count" carbs from things like eggs, beef liver and coconut milk. Those (usually) represent a small amount of carbs only, and they are usually well-distributed during the day, so I don't think they have a huge impact over my insulin levels.
I don't really count carbs, or calories in general, on a regular basis. I have put in a few sample daily meals in a calculator to get an idea of where I'm at, and once in a while I'll go plug the numbers in to see if my mental estimates are still fairly accurate. So far, so good.
