I have a Terra root veggie chip dependency. I know they are not Paleo as they are fried in grain oil.

Found these at the health food store today e.com/products/chips.html. They are done in Palm Oil with no other ingredients because the veggies and salt. I can't recall if Palm Oil is okay - is it Palm Kernel oil that's the bad one?

I guess I just just break down one of these days and learn how to make them.

Odder is that on the bag itself it's listed as the second to last ingredient, after all the veggies but before the salt. – Renee Oct 1 at 19:26

Sounds like a carb addition in disguise? When I want crunchy and chip-like, we get banana chips fried in coconut oil from the bulk bins at the health food store. They are great with quacamole! – NewEra Oct 1 at 19:29
Palm oil and palm kernel oil are both okay, IMHO. Palm kernel oil is much more saturated than regular palm oil. (Palm kernel is ~81% saturated; palm is ~41% and ~40% mono.) – Amy B. Oct 1 at 19:52

You could try these:

Root Veggie Chips

Personally though, I see no reason why you couldn't deep-fry them in lard or coconut oil if you had it available.

Have you tried making your own kale chips? I know they sound insubstantial and lame, but they're surprisingly awesome.

I thought they used canola? Canola is evil but if they're using palm oil now, I'm going to be back on them in a minute.

I hope you like my recipe for carrot chips, it is simple and can be applied to green plantains and sweet potatoes.
