I'm sure the answer is somewhere. But mostly I have found how much is too much? I want to know what it does for me. After eating it I felt healthier, but.. I bet I would have felt healthier anyway because I've only been eating Paleo for 6 weeks.
Can anyone tell me? What will I improve by eating liver, and how will I get healthier?

It's nature's only good source of Vit A.
Vit A is needed for more things than I care to list, but it's involved in skin health, eye health and maintaining integrity of the intestines and other membranes.
I wouldn't worry about eating too much liver unless you're eating the liver of carnivorous animals such as polar bears.
I would imagine that if it tastes good to you, eat it. And if it doesn't taste good to you, don't. I notice that for myself, my taste for beef liver does a good job of regulating how much I eat.
It's a good source of vitamin A, B-12 and other b vitamins, copper, selenium, and choline. It may not be a good idea if you have too much copper and not enough zinc. Then I would recommend chicken liver, instead.
Moderate amounts have all sorts of vitamin/mineral content. But paleos tend to fixate a bit too much on it, in my opinion. It's a good source of vitamin A - a mere one ounce has nearly 200% RDA. But then you read about some folks eating liver 4-5 times a week, 4-6 ounces a time. Upwards of 8 times the RDA weekly, which is at a toxic level.
The idea that paleolithic people were eating lots of liver (particularly large ruminant liver) is something that doesn't jive with me. (Animal weighting 100s of pounds, and you're going to eat the 1-5 pound liver often? Probably not.)
Grass fed beef liver? I never thought about it. I'll have to look into it. I know grass fed beef is a lot healthier and tastier than grain fed. That's why I only eat grass fed beef.
