I usually have a bowl of Fage Total Greek yoghurt after my meals and managed to get hold of some vanilla beans which smell amazing, i thought I would combine the 2 and have some delicious creamy vanilla greek yoghurt.
I split the bean and extracted the seeds and put them in the yoghurt, i was disappointed as I couldn't taste any vanilla AT ALL.
Is there a specific process I need to do in order to get the intense vanilla flavour into my greek yoghurt?
Vanilla beans really need to be extracted with something, like alcohol or simmering in a liquid. If you're okay with the tiny bit of alcohol in an extract, you can do this yourself at home with your nice beans and some vodka, rum, bourbon, etc. If the alcohol is not okay, it can be accomplished with glycerin. You can Google recipes. Not extracting the beans will usually be disappointing (and a waste of the lovely beans).
To make vanilla extract, slice the beans vertically and place in cheap booze. Let it sit at least six months, and you'll have amazingly good vanilla extract. I have some that's been sitting for two years, and it's thick and rich and a little goes a long way.
I would rather use a good quality, all natural vanilla extract. This is a brand i've used in the past, great taste and strength.
